Tis the Saison for a tempting new eaterie

FORMERLY known as Town Bar and Grill, Saison recently opened its Kildare Street doors with an official launch.
Its menus are designed around the best available seasonal produce, and guarantee dishes which feature top-quality meat and fish, whilst also giving close consideration to the best seasonal vegetable and fruit available.
The Kildare Street haunt, which has long been a favourite of Irish politicians and celebrities, was taken over by the restaurateur Ali Barker, who also owns La Bodega tapas restaurant in Ranelagh.
Barker recently said: “I do feel pressure re-launching such a well-known place, but we are confident in our concept and offering.
“We have transformed the interior, redecorating it in a teal and charcoal grey. The atmosphere is relaxed, much like Town Bar and Grill had been, with a similar price range, and although it will have a formal white tablecloth feel, the service will be relaxed and friendly.
“There has been a good buzz about it, so I think all the regular customers will come back in.”
Number 21 Kildare Street has been the place to be since 1805. Formerly Mitchell’s Wines, and then Town Bar and Grill, Saison will continue in this fashion.
Head chef Graeme Dodrill formerly of La Mere Zou and One Pico, will offer a French influence to the menu using fresh, locally-sourced seasonal ingredients.
He said: “I think there has been an uplift in the economy; you can feel the optimism in the air and the restaurant industry is definitely starting to pick up. People are getting out again.”
Dodrill will change the menu on a five-week basis to offer a wider range of exciting dishes.
